I bring over 40 years of culinary experience coupled with a strong desire to share healthy and delicious meals along with some helpful tips to help my baby boomer generation get back on the road to wellness. Back in the late 60′ and early 70’s I was part of the counterculture movement (hippie) and experimented with many new concepts about food and health like vegetarianism, macrobiotic diet, Arnold Ehret’s Mucusless Diet Healing System and publications like “Back to Eden” and Ralph Nader’s Water Wasteland. It was a time for getting in touch with one’s body and mind and I was a willing student. As the years progressed I went through times in my life, as most of us did, where I digressed from a healthy diet to an unhealthy one and being in the restaurant and food industry provided plenty of opportunities to overindulge in rich and decadent food that was all about taste and not about nutrition. Back when I was in culinary school, nutrition was never really addressed. Today we have so much information at our fingertips it boggles the mind and America is finally waking up to the fact that we are killing ourselves with unhealthy food choices and something must be done about it. As my usually robust health started to decline I realized I wasn’t just getting old…it was the choice of ‘fuel’ I was using that was ‘clogging my engine’ Our bodies are marvelous machines that when properly cared for with clean water, healthy food, exercise and adequate rest can actually heal themselves in most cases and give us vitality not only when we are young but also as we grow older.
